Fish & Fantastic Wines

Why have wine with fish?

Pairing wine with fish is a time-honored culinary tradition that enhances the dining experience by complementing the delicate flavors of seafood. The light, refreshing notes of white wines like Sauvignon Blanc or Chardonnay often balance the natural richness or brininess of fish, creating a harmonious flavor profile that elevates the meal. The acidity in wine also acts as a palate cleanser, cutting through the oils or fats in fish, leaving a clean and satisfying finish. Whether it's a flaky white fish or a richly textured salmon, the right wine can make all the difference.

How to Choose the Perfect Wine for Fish

Choosing the right wine for your fish dish doesn't have to be complicated. For lighter white fish, opt for crisp white wines such as Pinot Grigio or Albariño, which enhance the delicate flavors without overpowering them. For richer, meatier fish like tuna or salmon, you might consider a light-bodied red wine, such as Pinot Noir, or a fuller-bodied white like oaked Chardonnay. The cooking method of the fish also plays a role—grilled or smoked fish pairs wonderfully with wines that have notes of smokiness or spice, while poached or raw preparations shine with bright and zesty wines. Experimenting with pairings can also lead to delightful discoveries, making the journey of wine and fish a true adventure.

Champagne

Champagne is a sparkling white wine, produced exclusively in the Champagne region of France, known for its effervescence and distinct flavors. It's a blended wine, typically made from Pinot Noir, Chardonnay, and Pinot Meunier grapes. Here we have paired the champagne with our scallops. One of the key aspects that sets Champagne apart is the meticulous production process, known as the méthode champenoise, where a secondary fermentation occurs in the bottle to create its iconic bubbles. This labour-intensive method, combined with the unique terroir of the region, ensures each bottle offers a taste of unparalleled elegance and sophistication.
