Grouper Grande

Grand Orange Grouper

Ingredients

  • 1 tbsp honey
  • 2 grouper fish
  • 1 tbsp orange marmalade
  • 1 tbsp orange juice
  • 3/4 tsp dijon mustard
  • 1/2 tsp light soy sauce
  • salt & pepper to taste
  • For garnish scatter some chopped orange

Instructions

 

  • Fillet the fish, first remove the head, trim of fins and tail. Insert a sharp knofe into the under belly and remove the insides.
  • Continue to slice the fish sideways into 2 fillets.
  • Preheat oven 180 degrees, add the orange juice and grouper to a dish and cook for 10 minutes.
  • Combine all ingredients except grouper, mixing well. Coat the fish with the mix and cook for 5 minutes.
  • Turn the fish and coat witht the mix, top with a little extra honey to glaze.
  • Scatter some orange pieces over the top.
  • Pop under the grill for 5 minutes until the fish flakes easily
  • Garnish with some fresh oregano.marjoram or basil
