Grand Orange Grouper
Ingredients
- 1 tbsp honey
- 2 grouper fish
- 1 tbsp orange marmalade
- 1 tbsp orange juice
- 3/4 tsp dijon mustard
- 1/2 tsp light soy sauce
- salt & pepper to taste
- For garnish scatter some chopped orange
Instructions
- Fillet the fish, first remove the head, trim of fins and tail. Insert a sharp knofe into the under belly and remove the insides.
- Continue to slice the fish sideways into 2 fillets.
- Preheat oven 180 degrees, add the orange juice and grouper to a dish and cook for 10 minutes.
- Combine all ingredients except grouper, mixing well. Coat the fish with the mix and cook for 5 minutes.
- Turn the fish and coat witht the mix, top with a little extra honey to glaze.
- Scatter some orange pieces over the top.
- Pop under the grill for 5 minutes until the fish flakes easily
- Garnish with some fresh oregano.marjoram or basil
