Ingredients
- 200g Mackerel Fillets
- 8 Corn Tortillas
- 1 cup Cherry Tomatoes cut in half
- 1 yellow pepper cut into thin strips
- 1 cup cheddar cheese grated
- 3 spring onions chopped
- Coriander roughly chopped
- Salsa and/or sour cream/ chipotle sauce for serving
- 2 limes, sliced
- ¼ cup parmesan cheese
- sea salt and ground black pepper to taste

- Instructions

Heat 1-2 tablespoon vegetable oil in a non stick pan on medium heat. Heat one tortilla on both sides, remove and set to one side.

Add fish to hot pan and let brown on each side (about 6-8 minutes each side). Remove fish from pan.

Place the second tortilla in the heated non-stick pan and turn down heat a bit to low-medium.

Spread layer of fish pieces , grated cheese, tomatoes, spring onions, and peppers on one-half of the tortilla.

Sprinkle over with some parmesan. Pop the first tortilla on top. Place the saucepan partly under the grill to slightly warm before serving.

Check if cheese has melted by carefully lifting one side of the tortilla. Once cheese is melted and tortillas are toasted, slide onto a platter, you can cut this into triangles.

Serve with lime wedges, coriander, sour cream and salsa or chipotle sauce.
