Benefits of Eating Purple Sea Moss

Ingredients
- A handful Purple Sea Moss enough for 2 cups when rehydrated
- 190g Traditional Oak Smoked Mackerel
- 1 apple and 1 fennel bulb
- 1 large carrot
- 2 spring onions
- 1 big bunch dill
- 1/4 cup crème fraîche
- 1/4 cup yoghurt
- Juice of 1/4 lemon
- 1 tsp sugar, salt & pepper to taste
Instructions
- Grate some carrot and thinly slice some fennel and spring onions
- Drain any excess water from the sea moss and chop.
- Chop the apple into slices or cubes and add to the vegetables.
- Add the rest of the ingredients and give it a good mix so everything is coated.
- Pull the mackerel into pieces and place over the top of the vegetable slaw.
- Season with salt, pepper and sugar.
- Scatter a few pieces of dill on top
- Add extra yoghurt or lemon juice to preference
