What an interesting combination. We love rollmops and have done for many many years. They originated in Germany and the little sweet slivers of onion compliment the super fresh herring, soft and tangy from the vinegar. The dark rich beany sauce envelopes the mops and delivers a little kick from added chillies. An indulgent treat, add some stir fried peppers toenhance this further.

Ingredients
- 280g Fermented Black Beans in chilli oil
- 30g butter
- 1 tsp garlic
- 1 tsp ginger
- 1 tbsp dark soy sauce
- 260g rollmop herrings
- 1 green pepper
- black pepper to taste.
Insructions
- Add the butter to a large frying pan and heat. Add the garlic and ginger, dribble in some excess juice from the rollmops and should any onion fall in, cook this too.
- Add the soy sauce.
- Add half a jar of the fermented black beans and warn through.
- Place the rollmops into the middle of the frying pan and ladle the sauce all over the fih until totally covered.
- Season with some black pepper.
- Stir fry some green pepper to accompany.
