2 regular gherkins (dill pickle)

1 tablespoon lemon juice

Instructions
- Rinse and pat dry the shallots, and cut nto fine slices. Finely dice the Miatjes herring fillets and pickles. Peel, quarter, core and finely dice the apple. Add lemon juice, and mayonnaise.
- Spice with salt and pepper, and stir thoroughly to combine all ingredients.
- Keep refrigerated. If you intend to serve it immediately, leave it to refrigerate for 10 minutes.
- Spread the tartare on the bread and serve the dish with fresh herbs.
