This delicious mackerel has crispy, smoky skin and juicy, flavourful flesh. Packed with Omega 3, it's a healthy family dinner. Ingredients
- Parsley chopped
- 2 Fresh mackerel whole
- 2 Lemons sliced and juiced
- Olive oil
- Garlic
- Salt and pepper
- Filleting- First, remove the guts by cutting along the belly cavity and pulling them out. (side ways) Then, cut along the backbone to detach the fillets. Pin bones can be removed by pulling them out with tweezers.
Instructions
- Rinse the mackerel fillets and pat dry. Fillet or leave whole - remove any stray bones with tweezers.
- Whisk together the lemon juice, olive oil and crushed garlic with a pinch of salt and pepper. Pour the mixture over the fish and turn the mackerel fillets to coat. Cover the dish and leave to marinate for 15-20 minutes.
- Filleted or stuffed (preference) place the mackerel onto the grill of the BBQ or into a grill basket
- Cook the fish for 2-3 minutes on each side. Cook the skin-side first, and take care when turning to ensure that the skin is released from the grill and does not stick.
- Transfer the mackerel to a warm oven on low while you prepare other ingredients.
