Easy Lip Smacking Pescamama treats

Prawn Ceviche served in a cucmber case

Ingredients:

  • 210g cooked prawn, chopped
  • 2 tbsps lime (about 2 limes)
  • 2 tbsps lemon juice (about 1 lemons)
  • 1 tomato, diced
  • 1/4 red onion, finely chopped
  • 1 jalapeño, finely diced
  • Fresh coriander, chopped
  • Salt and pepper

 

Instructions:

  • In a bowl, mix prawn with lime and lemon juice. Let sit for 15 minutes to absorb the flavours.
  • Add diced tomato, onion, jalapeño, and coriander.
  • Season with salt and pepper to taste.
  • Serve with tortilla chips or on tostadas.
  • Peel edges of a cucumber, chop into inches and scoop out cucumber - fill with prawns,  yum!

These treats are light, refreshing, and easy to prepare!
