Easy Lip Smacking Pescamama treats

Here are some easy pescatarian treats featuring scallops, lemon, tuna poke, and shrimp ceviche:

  1. Seared Scallops with Lemon Butter

  • Ingredients:
    • Fresh scallops
    • 2 tbsp butter
    • 1 garlic clove, minced
    • Zest and juice of 1 lemon
    • Fresh parsley, chopped
    • Salt and pepper
  • Instructions:
    1. Pat scallops dry and season with salt and pepper.
    2. Heat butter in a skillet over medium-high heat. Sear scallops for 2-3 minutes on each side until golden.
    3. Add garlic and lemon juice to the pan. Cook for 1 more minute.
    4. Garnish with lemon zest and parsley before serving.
  1. Tuna Poke Bowl

  • Ingredients:
    • 8 oz sushi-grade tuna, diced
    • 2 tbsp soy sauce
    • 1 tbsp sesame oil
    • 1 tsp rice vinegar
    • 1 tsp sriracha (optional for heat)
    • 1/2 avocado, diced
    • 1/2 cucumber, sliced
    • Cooked sushi rice
    • Sesame seeds and green onions for garnish
  • Instructions:
    1. In a bowl, mix soy sauce, sesame oil, rice vinegar, and sriracha.
    2. Toss diced tuna in the sauce and let it marinate for 10-15 minutes.
    3. Assemble the bowl with sushi rice, tuna, avocado, and cucumber.
    4. Garnish with sesame seeds and green onions.
  1. Prawn Ceviche

  • Ingredients:
    • 210g cooked prawn, chopped
    • 2 tbsps lime (about 2 limes)
    • 2 tbsps lemon juice (about 1 lemons)
    • 1 tomato, diced
    • 1/4 red onion, finely chopped
    • 1 jalapeño, finely diced
    • Fresh coriander, chopped
    • Salt and pepper
  • Instructions:
    1. In a bowl, mix prawn with lime and lemon juice. Let sit for 15 minutes to absorb the flavours.
    2. Add diced tomato, onion, jalapeño, and coriander.
    3. Season with salt and pepper to taste.
    4. Serve with tortilla chips or on tostadas.
    5. Peel edges of a cucumber, chop into inches and scoop out cucumber - fill with prawns,  yum!

These treats are light, refreshing, and easy to prepare!
