Prawn Ceviche served in a cucmber case
Ingredients:
- 210g cooked prawn, chopped
- 2 tbsps lime (about 2 limes)
- 2 tbsps lemon juice (about 1 lemons)
- 1 tomato, diced
- 1/4 red onion, finely chopped
- 1 jalapeño, finely diced
- Fresh coriander, chopped
- Salt and pepper
Instructions:
- In a bowl, mix prawn with lime and lemon juice. Let sit for 15 minutes to absorb the flavours.
- Add diced tomato, onion, jalapeño, and coriander.
- Season with salt and pepper to taste.
- Serve with tortilla chips or on tostadas.
- Peel edges of a cucumber, chop into inches and scoop out cucumber - fill with prawns, yum!
