Instructions

  1. Sauté the Aromatics:
    • Heat the oil in a large skillet or wide pan over medium heat.
    • Add the minced garlic, grated ginger, and sliced lemongrass, stirring for about 30 seconds until fragrant (be careful not to burn the garlic).
  2. Build the Sauce:
    • Stir in the Thai red curry paste and fry for 1 minute until it darkens slightly and releases its oils.
    • Pour in half of the coconut milk first, stirring to combine with the paste into a rich, cohesive base. Then pour in the remaining coconut milk, fish sauce, and brown sugar. Bring to a gentle simmer.
  3. Gently Cook the Fish & Pak Choi:
