Sweet Fishy Mash

Our son named this dish after a holiday in Turkey. Tasting it for the first time we never knew what it was called... Guessing the flavours our son always asked for fishy mash, and so it was born. We've made it ever since and add all sorts of sides. Sometimes spaghetti hoops or peas and veggie gravy, whatever we're in the mood for. Sweet potatoes are great and getting you're children to love this will be easy.

Ingredients (Serves 2/3)

1 bag sweet potatoes, scrubbed clean, 5 to 6 medium

1 tin of tuna in olive oil

1 tsp fine sea salt

1 bay leaf

1 pinch of paprika

Ground black pepper to taste

Instructions

  • Peel sweet potatoes and cut them into 1-inch cubes.
  • Place cubes in a large pot. Cover with water. Add salt and bay leaf. Bring to a boil, reduce heat, and simmer until tender and easily pierced with a fork, 10 to 12 minutes. Drain.
  • Return the sweet potatoes to the pot, remove bay leaf. Add tinned tuna and mash with a potato masher to your desired texture.
  • Season with a pinch of paprika, black pepper, and a pinch of salt. For extra creamy sweet potatoes, stir in cream.(optional)

Optional additions:

  • Avocado: Adds healthy fats and a creamy texture.  Greek Yogurt: Contributes tanginess and creaminess.  Onion, Spring Onion, or Dill: Adds flavor and freshness.  Lemon Juice or Zest: Adds brightness and acidity.  Other vegetables: Broccoli, carrots, or peas can be added for extra nutrients and texture.  Cheddar cheese: Can be added for a richer, cheesier flavour.  Spices: Onion powder, garlic powder, or sriracha can be added for extra flavour.
