Spicy Citrus Prawn & Courgette Noodle Stir-Fry

Ingredients
- For the Shrimp:
- 350g large prawns, peeled and deveined
- 1 tbsp olive oil or sesame oil
- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 1/2 tsp red pepper flakes (or to taste)
- Zest and juice of 1 medium lime (plus orange zest for an extra citrus kick)
- For the Noodles & Veggies:
- 3 medium courgettes (zucchini), spiralized into noodles
- 1 red bell pepper, thinly sliced
- 1 cup snap peas, trimmed
- 2 spring onions, sliced (greens and whites separated)
- For the Citrus-Soy Sauce:
- 2 tbsp low-sodium soy sauce (or tamari)
- 1 tbsp rice vinegar
- 1 tsp honey or maple syrup
- 1 tsp Sriracha or chili garlic paste (optional for extra heat)
- To Garnish:
- Fresh cilantro (coriander) or mint leaves
- Roasted sesame seeds
- Lime wedges
Instructions
- Whisk the Sauce: In a small bowl, whisk together the soy sauce, rice vinegar, honey, Sriracha, and lime juice. Set aside.
- Marinate the Shrimp: Toss the prawns with half of the minced garlic, half of the ginger, lime zest, and a pinch of salt. Let them sit for 5 minutes while you prep the vegetables.
- Sear the Shrimp: Heat a large wok or skillet over medium-high heat with a splash of oil. Add the prawns in a single layer and cook for 1 to 2 minutes per side until pink and opaque. Remove them from the pan and set aside.
- Stir-Fry the Veggies: In the same pan, add a touch more oil if needed. Toss in the sliced red bell pepper, snap peas, and the white parts of the spring onions. Stir-fry for 2–3 minutes until tender-crisp.
- Add Courgette Noodles: Add the spiralized courgette noodles and the remaining garlic and ginger directly into the pan. Toss quickly for just 1 to 2 minutes—courgettes cook very fast and you want to keep them from getting watery!
- Combine and Coat: Pour the citrus-soy sauce mixture over the noodles and vegetables, tossing everything together for 30 seconds until hot.
- Finish: Return the cooked prawns to the wok, tossing them through the noodles to warm them back up.
- Serve: Plate immediately, garnished with toasted sesame seeds, fresh herbs, the remaining spring onion greens, and a side lime wedge.
