Best Cuban Pescado con Mojo (Easy Fish with Garlic Sauce)

Ingredients

  • 1 lb white fish fillets from (snapper, grouper, or cod)
  • 2 tbsp olive oil (divided)
  • 1/2 cup sour orange juice (or mix 1/4 cup navel orange juice and 3 tbsp lime/lemon juice)
  • 4 to 6 cloves garlic, finely minced
  • 1 tsp dried oregano
  • 1/2 tsp ground cumin
  • Salt and black pepper to taste
  • Fresh coriander or parsley for garnish]

Instructions

  • Pat dry the fish fillets with a paper towel. Season both sides with salt, pepper, and a pinch of cumin.
  • Heat 1 tablespoon of olive oil in a skillet over medium-high heat.
  • Sear the fish for 3 to 4 minutes per side until golden brown and flaky. Remove the fish to a warm plate.
  • Make the mojo by lowering the heat and adding the remaining oil to the pan. Toss in the minced garlic and cook for 30 seconds until fragrant (do not let it burn).
  • Pour in the sour orange juice, oregano, and remaining cumin. Let the sauce bubble and slightly reduce for 1 to 2 minutes.
  • Spoon the warm garlic-citrus mojo sauce directly over the cooked fish fillets. Garnish with fresh herbs
