
Peppery Radish & Horseradish side salad
Here is a crisp, vibrant, and punchy side salad that pairs the peppery crunch of fresh radishes with the sharp, clean bite of horseradish. It makes a fantastic accompaniment to rich seafood dishes, grilled fish, or barbecues

Ingredients
The Salad Base:
- 3 bunches (about 12–15) fresh radishes, trimmed and very thinly sliced (use a mandoline if you have one for paper-thin rounds)
- 1 medium cucumber, halved lengthwise, seeded, and thinly sliced into half-moons
- 3 spring onions (scallions), thinly sliced (both white and green parts)
- 1 small handful fresh dill or flat-leaf parsley, roughly chopped
The Dressing:
- 2 tbsp grated fresh horseradish (or prepared horseradish)
- 3 tbsp soured cream or crème fraîche (adds a rich, cooling contrast to the heat)
- 1 tbsp extra-virgin olive oil
- 1 tbsp fresh lemon juice (or apple cider vinegar)
- 1 tsp Dijon mustard
- 1/2 tsp honey or maple syrup (just to balance the sharpness)
- Sea salt and freshly ground black pepper to taste
Instructions
- Prep the Veg: Place the sliced radishes, cucumber, and spring onions into a large bowl. Tip: If you want an extra-crisp texture and a slightly milder bite, soak the sliced radishes in a bowl of ice water for 10 minutes, then drain and pat dry thoroughly before assembling.
- Mix the Dressing: In a small bowl, whisk together the grated horseradish, soured cream, olive oil, lemon juice, Dijon mustard, and honey until smooth. Taste and season with salt and pepper.
- Combine: Pour the dressing over the radish and cucumber mixture. Toss gently to ensure everything is evenly coated.
- Garnish & Chill: Stir in most of the chopped fresh dill or parsley, reserving a pinch for the top. For the best flavor, let the salad sit for about 10–15 minutes before serving to let the radishes lightly pickle in the dressing.
- Serve: Transfer to a serving dish, garnish with the remaining herbs, and enjoy immediately.
Chef's Tip
If you want to add a bit of extra texture, a handful of toasted pumpkin seeds or crushed walnuts sprinkled right on top provides a wonderful nutty crunch.
