Oysters Rockefeller

The world is your oyster - come- embark- try these aniseedy treats with a little crunch. Perfect for any occasion, these delightful bites bring a unique flavor that will tantalize your taste buds and leave you craving more. Ingredients (to share)

  • 24 fresh Oysters, shucked, shells reserved
  • 2 Garlic Cloves
  • Half pack fresh spinach
  • 3 spring onions
  • 1 bunch chopped parsley, 2 tsp lemon juice
  • 1 tbsp butter.
  • 2 tbsp Pernod or other anise-flavored liqueur
  • Half pack panko bread crumbs 
  • 2 tbsp grated Parmesan
  • 1 tbsp olive oil 
  • coarse salt and ground black pepper to taste

Instructions

  • Using a Food Processor pulse: garlic, spinach,spring onions, parsley, 
  • lemon juice, butter, and Pernod to a food processor and pulse until finely chopped.
  • In a medium bowl combine, panko, Parmesan, and oil.
  • Divide spinach mixture among oysters and sprinkle with Parmesan mixture.
  • Bake until spinach mixture is bubbling and panko is deeply golden,
  • about 8 minutes. Serve with lemon wedges
