Garlic-Ginger Salmon & Bulgur Bowl

Ingredients

For the Salmon & Bulgur

  • Salmon Fillets: 2 portions (skin-on or skinless)
  • Bulgur Wheat: 1 cup (coarse or fine)
  • Low-Sodium Soy Sauce (or Tamari): 3 tablespoons
  • Fresh Ginger: 1 tablespoon, finely grated
  • Garlic: 2 cloves, minced
  • Sesame Oil: 1 teaspoon
  • Honey or Maple Syrup: 1 tablespoon
  • Vegetable Broth or Water: 1.5 cups (for cooking the bulgur)
  • Olive Oil: 1 tablespoon

For the Toppings & Garnish

  • Cucumber: 1 medium, diced or ribboned with a peeler
  • Edamame: 1 cup, shelled and steamed
  • Avocado: 1, sliced
  • Green Onions: 2, thinly sliced
  • Sesame Seeds: 1 tablespoon (toasted)
  • Fresh Cilantro: A small handful, chopped (optional)

Instructions

1. Prepare the Bulgur

  1. Heat a drizzle of olive oil in a saucepan over medium heat.
  2. Stir in the dry bulgur wheat for about 1–2 minutes until lightly toasted and fragrant.
  3. Pour in the vegetable broth (or water), bring to a gentle boil, then cover, reduce heat to low, and simmer for 10–12 minutes until the liquid is absorbed and the grain is tender.
  4. Remove from heat and let it steam covered for 5 minutes, then fluff with a fork.

2. Mix the Glaze & Marinate the Salmon

  1. In a small bowl, whisk together the soy sauce, grated ginger, minced garlic, sesame oil, and honey (or maple syrup).
  2. Place the salmon fillets in a shallow dish and brush generously with half of the glaze, reserving the rest for serving. Let them sit for 10 minutes to absorb the flavors.

3. Cook the Salmon

  • Pan-Sear Method: Heat a skillet over medium-high heat with a touch of oil. Place the salmon flesh-side down for 3–4 minutes until a nice sear forms, then flip, reduce heat, and cook for another 3–4 minutes until cooked through.
  • Oven-Roast Method: Alternatively, place the salmon on a parchment-lined baking sheet and roast at 200°C (400°F) for 10–12 minutes until flaky.

4. Assemble the Bowls

  1. Divide the warm, fluffy bulgur evenly between two bowls.
  2. Nestled alongside the grain, arrange the sliced avocado, steamed edamame, and fresh cucumber.
  3. Place the glazed garlic-ginger salmon right on top.
  4. Drizzle any remaining glaze over the bowl, and garnish generously with toasted sesame seeds, sliced green onions, and fresh cilantro.

Chef's Tip: For an extra layer of texture, try lightly toasting your sesame seeds in a dry skillet for 1 minute before sprinkling them over the top.
