Ingredients
For the Salmon & Bulgur
- Salmon Fillets: 2 portions (skin-on or skinless)
- Bulgur Wheat: 1 cup (coarse or fine)
- Low-Sodium Soy Sauce (or Tamari): 3 tablespoons
- Fresh Ginger: 1 tablespoon, finely grated
- Garlic: 2 cloves, minced
- Sesame Oil: 1 teaspoon
- Honey or Maple Syrup: 1 tablespoon
- Vegetable Broth or Water: 1.5 cups (for cooking the bulgur)
- Olive Oil: 1 tablespoon
For the Toppings & Garnish
- Cucumber: 1 medium, diced or ribboned with a peeler
- Edamame: 1 cup, shelled and steamed
- Avocado: 1, sliced
- Green Onions: 2, thinly sliced
- Sesame Seeds: 1 tablespoon (toasted)
- Fresh Cilantro: A small handful, chopped (optional)
Instructions
1. Prepare the Bulgur
- Heat a drizzle of olive oil in a saucepan over medium heat.
- Stir in the dry bulgur wheat for about 1–2 minutes until lightly toasted and fragrant.
- Pour in the vegetable broth (or water), bring to a gentle boil, then cover, reduce heat to low, and simmer for 10–12 minutes until the liquid is absorbed and the grain is tender.
- Remove from heat and let it steam covered for 5 minutes, then fluff with a fork.
2. Mix the Glaze & Marinate the Salmon
- In a small bowl, whisk together the soy sauce, grated ginger, minced garlic, sesame oil, and honey (or maple syrup).
- Place the salmon fillets in a shallow dish and brush generously with half of the glaze, reserving the rest for serving. Let them sit for 10 minutes to absorb the flavors.
3. Cook the Salmon
- Pan-Sear Method: Heat a skillet over medium-high heat with a touch of oil. Place the salmon flesh-side down for 3–4 minutes until a nice sear forms, then flip, reduce heat, and cook for another 3–4 minutes until cooked through.
- Oven-Roast Method: Alternatively, place the salmon on a parchment-lined baking sheet and roast at 200°C (400°F) for 10–12 minutes until flaky.
4. Assemble the Bowls
- Divide the warm, fluffy bulgur evenly between two bowls.
- Nestled alongside the grain, arrange the sliced avocado, steamed edamame, and fresh cucumber.
- Place the glazed garlic-ginger salmon right on top.
- Drizzle any remaining glaze over the bowl, and garnish generously with toasted sesame seeds, sliced green onions, and fresh cilantro.
Chef's Tip: For an extra layer of texture, try lightly toasting your sesame seeds in a dry skillet for 1 minute before sprinkling them over the top.
