Game Changing Cod Kizhi

Making a Fish Kizhi (or a simplified South Indian Meen Pollichathu style parcel) with cod is an absolute game-changer. Cod is flaky, holds its shape well, and absorbs the punchy, aromatic coconut-spice masala beautifully without overpowering it.

By skipping the traditional step of pre-frying the fish, this streamlined method cuts down prep time significantly while keeping the cod exceptionally moist as it steams and roasts inside its banana leaf parcel.

Ingredients (Serves 2)

The Quick Masala Base

  • Shallots or Small Red Onion: 1 medium onion (or 6–8 shallots), finely chopped
  • Ginger & Garlic: 1 tbsp freshly minced or crushed
  • Green Chilli: 1–2, finely slit (adjust to heat preference)
  • Tomato: 1 medium, finely chopped
  • Curry Leaves: A generous handful (crucial for that authentic aroma)

Spice Powders

  • Kashmiri Chilli Powder: 1 tsp (gives a vibrant red color without blistering heat)
  • Coriander Powder: 1 tsp
  • Turmeric Powder: 1/2 tsp
  • Black Pepper: 1/4 tsp
  • Salt & Lemon Juice: To taste (plus a squeeze of fresh lemon for the fish)

Step-by-Step Instructions

1. Quick Cod Prep

  • Pat the cod fillets dry with kitchen paper.
  • Lightly season them with a pinch of salt, a dash of turmeric, and a squeeze of fresh lemon juice. Set aside while you make the masala.

2. Build the Masala

  • Heat coconut oil in a pan over medium heat.
  • Toss in the curry leaves, chopped onions (or shallots), green chillies, and crushed ginger-garlic. Sauté for 3–4 minutes until the onions turn soft and translucent.
  • Lower the heat slightly and add your dry spices: Kashmiri chilli powder, coriander powder, turmeric, and pepper. Stir continuously for 30 seconds until the raw spice smell disappears.
  • Add the chopped tomatoes and a pinch of salt. Cook down for 3–5 minutes, mashing them with the back of your spoon until you get a thick, jammy, cohesive masala paste. Turn off the heat.

3. Assemble the Parcels

  • Lay out your softened banana leaf piece.
  • Spoon a generous tablespoon of the warm onion-tomato masala right in the center.
  • Place the raw cod fillet directly on top of the bed of masala.
  • Spoon the remaining masala over the fish, ensuring it is completely blanketed. Throw an extra fresh sprig of curry leaves on top.
  • Fold the banana leaf tightly into a rectangular parcel (envelope style) and secure it with kitchen twine or secure toothpicks.

4. Pan-Sear / Steam the Kizhi

  • Heat a heavy skillet, tawa, or frying pan over medium-low heat with a tiny splash of coconut oil.
  • Place the parcels seam-side down on the pan.
  • Cover the pan with a lid to trap the steam and heat.
  • Let it cook gently on low-medium heat for about 7 to 8 minutes, then carefully flip and cook for another 5 minutes. Because cod flakes and cooks much faster than whole fish, this gentle window is plenty of time for the fish to steam-poach in its own juices while absorbing the smoke of the charred banana leaf.

Serving Suggestion

Carefully cut or open the string right at the table so the aromatic steam releases all at once. Serve piping hot alongside plain steamed basmati rice, or lemon rice.
