Wiri Wiri Whitebait
This vibrant, fiery twist on classic crispy whitebait pairs the delicate, sweet crunch of whole-fried small fish with the distinct, fruity heat of aromatic wiri wiri peppers (a fiery little chili pepper native to Guyana, known for its cherry-like shape and intense punch).
Ingredients
- Whitebait: 400g (approx. 14 oz), fresh or thoroughly thawed and patted completely dry Group Recipes
- Wiri Wiri Peppers: 3 to 4 dried (or substituted with scotch bonnet/habanero if unavailable, though wiri wiri has a unique fruitiness)
- Flour Coating:
- 75g (½ cup) plain flour
- 1 tsp garlic powder Meat Smoke Fire
- 1 tsp fine sea salt
- ½ tsp freshly cracked black pepper
- Frying:
- Vegetable oil (for deep-frying or shallow pan-frying) SBS
- To Serve:
- Fresh lime or lemon wedges
- Fresh red chilli
- A handful of fresh coriander or finely chopped green onions
- Flaky sea salt (such as Maldon)
Instructions
1. Prep the Fish
- Rinse the whitebait gently under cold water and pat them completely dry with paper towels. Removing excess moisture is the secret to getting a light, ultra-crispy coating instead of a soggy batter.
2. Mix the Seasoned Flour
- In a wide bowl or a large ziplock bag, combine the plain flour, garlic powder, fine sea salt, and black pepper. YouTube
3. Infuse and Heat the Oil
- Fill a deep, heavy-based saucepan one-third full with vegetable oil. Heat the oil to roughly 190°C (375°F).
- Optional Wiri Wiri Infusion: If you like a deeply infused heat, drop half of your dried wiri wiri peppers into the hot oil for about 30 seconds right before frying to aromatize the oil, then fish them out so they don't burn, or leave them in if you want extra intensity.
4. Coat and Fry
- Toss the dry whitebait into the seasoned flour mixture. Toss gently to ensure every little fish is lightly coated, then shake off any excess flour using a fine-mesh sieve.
- Working in small, manageable batches (so you don't drop the oil temperature), carefully drop the whitebait into the hot oil.
- Fry for 2 to 3 minutes until they turn a light golden color and float to the surface.
5. Drain and Crisp
- Remove the whitebait with a slotted spoon or spider skimmer and transfer them immediately to a plate lined with paper towels to drain.
6. Toss with Fresh chilli & serve
- While the whitebait is still piping hot, transfer to a serving dish and toss gently with the freshly sliced chilli and chopped coriander. The contrast of the sizzling hot, crispy fish against the sharp, fresh bite of the raw chili is incredible.
- Sprinkle with flaky sea salt and serve immediately with fresh citrus wedges on the side.
