Sweet 'N' Smoky BBQ Basa

This recipe combines tender, flaky basa fillets with a sticky, caramelized sweet and smoky barbecue glaze. Basa's mild flavour makes it an ideal canvas for bold barbecue spices, creating a quick, restaurant-quality meal in under 20 minutes.

Ingredients

For the Fish:

  • 2 Basa fillets (about 200g–250g each), patted completely dry
  • 1 tablespoon olive oil (or neutral cooking oil)
  • Salt and freshly cracked black pepper, to taste

For the Sweet & Smoky BBQ Glaze:

  • 3 tablespoons quality barbecue sauce (choose your favourite smoky or honey-infused brand)
  • 1 tablespoon tomato ketchup
  • 1 tablespoon maple syrup or dark brown sugar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • A pinch of cayenne pepper or chipotle powder (optional, for heat)
  • 1 teaspoon apple cider vinegar (to balance the sweetness)

For Garnish:

  • Freshly chopped cilantro or flat-leaf parsley
  • Lime wedges

Instructions

1. Mix the Glaze

In a small bowl, whisk together the barbecue sauce, ketchup, maple syrup (or brown sugar), smoked paprika, garlic powder, onion powder, cayenne pepper (if using), and apple cider vinegar until smooth. Set aside.

2. Prep the Basa

Pat the basa fillets thoroughly with paper towels to remove excess moisture—this ensures a better sear. Season both sides lightly with salt and black pepper.

3. Sear the Fish

Heat the olive oil in a skillet (cast iron or non-stick works best) over medium-high heat. Once the oil is shimmering, add the basa fillets. Sear undisturbed for 3 to 4 minutes until the bottom develops a light golden crust.

4. Flip and Glaze

Carefully flip the fillets. Immediately spoon and brush a generous amount of the sweet and smoky BBQ glaze over the top of each fillet. Lower the heat to medium-low.

5. Caramelize

Let the fish cook for another 3 to 4 minutes. As the glaze bubbles, it will thicken and caramelize around the edges of the fish. (Basa is cooked through when it flakes easily with a fork and reaches an internal temperature of 63°C).

6. Serve

Transfer the glazed basa fillets to plates. Spoon any remaining sticky glaze from the pan directly over the top. Garnish with chopped herbs and a squeeze of fresh lime juice.
