Sticky Rice & Baked Tilapia

"Experience our Tilapia and Sticky Rice Duet—a study in complementary textures. We present delicately baked tilapia, known for its light, buttery flakiness, paired with a mound of sweetly yielding, pearlescent sticky rice. This comforting core is beautifully augmented by the addition of bright, heirloom carrots, which introduce a flash of colour and a subtle, natural sweetness and snap. The entire composition is finished with a brilliant drizzle of citrus-infused glaze.

Ingredients (Serves 2)

Instructions

  • Lay the tilapia on a baking sheet, top with butter and olive oil.
  • Sprinkle with lemon pepper, garlic powder, salt and pepper, chilli flakes and lemon juice.
  • Bake at 200 degrees for 15 minutes, meanwhile; add the cup of sticky rice and 2 cups of water to a pan, bring to boil.
  • Please a lid on top and leave for about 20 minutes until totally cooked. 
  • Carrots: Use a Bamboo steamer for great results to steam your carrots.
  • Steam for about 5 - 10 minutes or until tender.
  • Coat with 1 tablespoon melted butter, season with salt and pepper.
  • Garnish the tilapia with fresh dill and serve over sticky rice.
