Spicy Matcha Mackerel Tower

This recipe combines the rich, oily profile of fresh mackerel with an earthy matcha-chili crust, structured into an architectural cylindrical stack.

Ingredients (Serves 2)

  • 2 large fresh mackerel fillets (skin-on, bones removed)
  • 1 large sweet potato, peeled and cut into rounds (or 1.5 cups cooked sticky sushi rice seasoned with rice vinegar)

1 tbsp sesame oil (for searing)

Step-by-Step Instructions

1. Prepare the Base Elements

  • The Potato/Rice Foundation: If using sweet potato, steam or roast the rounds until tender, then cut them using your cylindrical plating ring to create two uniform, bite-sized discs. If using sushi rice, press the seasoned warm rice firmly into the bottom of the greased plating ring to form a compact base layer.
  • The Wasabi-Avocado Purée: In a small bowl, mash the ripe avocado with the fresh lime juice, a pinch of sea salt, and a tiny dash of wasabi paste until smooth. Set aside.

2. Mix the Spicy Matcha Crust

  • In a shallow dish, whisk together the matcha powder, cayenne pepper (or gochugaru), sesame seeds, and panko/nori crumbs.
  • In a separate small bowl, combine the tamari and grated fresh ginger.

3. Sear the Mackerel

  • Lightly brush the flesh side of the mackerel fillets with the ginger-tamari mixture.
  • Press the flesh side firmly into the spicy matcha crust mixture to coat it evenly.
  • Heat the sesame oil in a skillet over medium-high heat. Place the mackerel fillets skin-side down first for about 3 minutes until crisp, then gently flip and sear for 1 to 2 minutes on the crust side until just cooked through. Remove from heat and let rest briefly.

4. Plate and Construct the Tower

  • Place your cylindrical ring mold directly onto the serving plate.
  • Layer 1 (Base): Add your compressed sweet potato disc or pressed sushi rice.
  • Layer 2 (Middle): Spoon in a thick layer of the wasabi-avocado purée.
  • Layer 3 (Structure): Add a neatly cut portion of warm, flaked or pressed mackerel meat to bind the center.
  • Layer 4 (The Cap): Carefully lift the ring mold and crown the top of the tower with a crisp, vibrant green matcha-crusted mackerel fillet.

5. The Finish

  • Drizzle a little chili-infused sesame oil and a drop of tamari around the base of the plate. Garnish with a few micro-greens or black sesame seeds for contrast.
