Ingredients
The Trout & Seasoning
- Rainbow Trout Fillets: 2 (approx. 150g each), skin-on
- Extra Virgin Olive Oil: 1 tbsp
- Lemon Juice: 1 tbsp
- Garlic Powder: 1/2 tsp
- Smoked Paprika: 1/4 tsp
- Salt and Freshly Ground Black Pepper: To taste
The Crunchy Rainbow Salad Base
- Yellow Bell Pepper: 1/2 cup, thinly sliced or diced
- Cucumber: 1/2 medium, diced or ribboned
- Cherry Tomatoes: 1 cup, halved
- Black Olives: 1/2 cup, pitted and sliced or left whole (Kalamata or Niçoise work brilliantly)
- Radishes: 4-5, thinly sliced (for a sharp, peppery bite)
- Carrot: 1 small, grated or shaved into ribbons
- Fresh Herbs: 1/4 cup chopped fresh parsley, coriander (cilantro), or mint
Zesty Herb Dressing
- Extra Virgin Olive Oil: 3 tbsp
- Fresh Lemon Juice: 2 tbsp
- Dijon Mustard: 1 tsp
- Honey or Maple Syrup: 1/2 tsp (optional)
- Salt and Pepper: To taste
Step-by-Step Instructions
1. Prepare the Dressing
In a small glass jar or bowl, whisk together the olive oil, lemon juice, Dijon mustard, honey (if using), salt, and pepper until well emulsified. Set aside.
2. Cook the Rainbow Trout
- Pat the trout fillets completely dry with paper towels. Season both sides with salt, pepper, garlic powder, and smoked paprika.
- Heat 1 tablespoon of olive oil in a skillet over medium-high heat.
- Place the trout fillets skin-side down in the hot pan, pressing down gently for the first 10 seconds.
- Cook for 4 to 5 minutes until the skin is crisp and golden, then flip and cook for another 2 to 3 minutes until just cooked through. Drizzle with a squeeze of fresh lemon juice before removing from the heat.
3. Toss the Salad
- In a large mixing bowl, combine the yellow bell pepper, cucumber, cherry tomatoes, sliced black olives, radishes, grated carrot, and fresh herbs.
- Drizzle about two-thirds of the zesty herb dressing over the vegetables and toss gently to coat.
4. Assemble the Bowls
Drizzle the remaining dressing over the fish and garnish with a few extra herbs or a few extra whole olives. Serve immediately!
