Ingredients

The Trout & Seasoning

  • Rainbow Trout Fillets: 2 (approx. 150g each), skin-on
  • Extra Virgin Olive Oil: 1 tbsp
  • Lemon Juice: 1 tbsp
  • Garlic Powder: 1/2 tsp
  • Smoked Paprika: 1/4 tsp
  • Salt and Freshly Ground Black Pepper: To taste

The Crunchy Rainbow Salad Base

  • Yellow Bell Pepper: 1/2 cup, thinly sliced or diced
  • Cucumber: 1/2 medium, diced or ribboned
  • Cherry Tomatoes: 1 cup, halved
  • Black Olives: 1/2 cup, pitted and sliced or left whole (Kalamata or Niçoise work brilliantly)
  • Radishes: 4-5, thinly sliced (for a sharp, peppery bite)
  • Carrot: 1 small, grated or shaved into ribbons
  • Fresh Herbs: 1/4 cup chopped fresh parsley, coriander (cilantro), or mint

Zesty Herb Dressing

  • Extra Virgin Olive Oil: 3 tbsp
  • Fresh Lemon Juice: 2 tbsp
  • Dijon Mustard: 1 tsp
  • Honey or Maple Syrup: 1/2 tsp (optional)

Step-by-Step Instructions

1. Prepare the Dressing

In a small glass jar or bowl, whisk together the olive oil, lemon juice, Dijon mustard, honey (if using), salt, and pepper until well emulsified. Set aside.

2. Cook the Rainbow Trout

  • Pat the trout fillets completely dry with paper towels. Season both sides with salt, pepper, garlic powder, and smoked paprika.
  • Heat 1 tablespoon of olive oil in a skillet over medium-high heat.
  • Place the trout fillets skin-side down in the hot pan, pressing down gently for the first 10 seconds.
  • Cook for 4 to 5 minutes until the skin is crisp and golden, then flip and cook for another 2 to 3 minutes until just cooked through. Drizzle with a squeeze of fresh lemon juice before removing from the heat.

3. Toss the Salad

  • In a large mixing bowl, combine the yellow bell pepper, cucumber, cherry tomatoes, sliced black olives, radishes, grated carrot, and fresh herbs.
  • Drizzle about two-thirds of the zesty herb dressing over the vegetables and toss gently to coat.

4. Assemble the Bowls

Drizzle the remaining dressing over the fish and garnish with a few extra herbs or a few extra whole olives. Serve immediately!

Lay a warm, pan-seared rainbow trout fillet right on top or beside the salad.
