Step-by-Step Instructions

1. Rehydrate the Chilies

  1. Toast the dried guajillo and chiles de árbol in a dry skillet over medium-low heat for about 1 to 2 minutes, pressing them down gently until fragrant (do not let them burn or they will turn bitter).
  2. Transfer the toasted chilies to a bowl, cover them with boiling water, and let them soak for 15 to 20 minutes until soft. Drain.

2. Roast the Aromatics

  1. In the same skillet, place the tomato halves, onion chunks, and garlic cloves.

3. Blend the Sauce

4. Simmer the Sauce

  1. Heat 1 tablespoon of olive oil in a large skillet or wide saucepan over medium heat.

5. Sear the Snapper
