Melting Mackerel Quesadillas

Mackerel quesadillas combine the rich, smokiness of mackerel with gooey melted cheese and a crispy tortilla for a satisfying meal. Perfect any time of day with a dollop of salsa or sour cream. Mmm 😋 For a healthy twist, consider adding some fresh vegetables like diced tomatoes, chopped spinach, or thinly sliced red onions. Not only do they add a burst of colour and flavour, but they also pack in extra nutrients, elevating your quesadilla to a wholesome and balanced dish. Whether for a quick snack or a hearty dinner, these additions make your meal even more irresistible!

Ingredients (Serves 4)

  • 200g Mackerel Fillets
  • 8 Corn Tortillas 
  • 1 cup Cherry Tomatoes cut in half
  • 1 yellow pepper cut into thin strips
  • 1 cup cheddar cheese grated 
  • 3 spring onions chopped
  • Coriander roughly chopped
  • Salsa and/or sour cream/ chipotle sauce for serving
  • 2 limes, sliced
  • ¼ cup parmesan cheese
  • sea salt and ground black pepper to taste
  • olive oil

Instructions

  • Heat 1-2 tablespoon vegetable oil in a non stick pan on medium heat. Heat one tortilla on both sides, remove and set to one side.
  • Add fish to hot pan and let brown on each side (about 6-8 minutes each side). Remove fish from pan.
  • Place the second tortilla in the heated non-stick pan and turn down heat a bit to low-medium.
  • Spread layer of fish pieces , grated cheese, tomatoes, spring onions, and peppers on one-half of the tortilla.
  • Sprinkle over with some parmesan. Pop the first tortilla on top. Place the saucepan partly under the grill to slightly warm before serving.
  • Check if cheese has melted by carefully lifting one side of the tortilla. Once cheese is melted and tortillas are toasted, slide onto a platter, you can cut this into triangles.
  • Serve with lime wedges, coriander, sour cream and salsa or chipotle sauce.
