Herring Tartare Pumpernickel
Savour the rich, satisfying flavour of this Northern European classic. At its heart, herring fillets deliver delicate salinity and vinegary tang, perfectly complementing a slice of dark, dense pumpernickel with its moist, slightly sweet crumb. Topped with finely diced crisp Granny Smith apple and a silky lemon-dill mayonnaise, this invigorating open-faced sandwich is crafted to energize and delight!
Ingredients (4 servings)
- 2 Shallots
- 450g pickled Herring Fillets with onions
- 2 regular gherkins (dill pickle)
- 1 Apple
- 1 tablespoon lemon juice
- 2 tbsp mayonnaise
- sea salt and ground black pepper
- Pumpernickel Bread
Instructions
- Rinse and pat dry the shallots, and cut nto fine slices. Finely dice the herring fillets and pickles.
- Peel, quarter, core and finely dice the apple. Add lemon juice, and mayonnaise.
- Spice with salt and pepper, and stir thoroughly to combine all ingredients.
- Keep refrigerated.If you intend to serve it immediately, leave it to refrigerate for 10 minutes.
- Spread the tartare on the bread and serve the dish with fresh herbs.
