Herring Tartare Pumpernickel

Savour the rich, satisfying flavour of this Northern European classic. At its heart, herring fillets deliver delicate salinity and vinegary tang, perfectly complementing a slice of dark, dense pumpernickel with its moist, slightly sweet crumb. Topped with finely diced crisp Granny Smith apple and a silky lemon-dill mayonnaise, this invigorating open-faced sandwich is crafted to energize and delight!

Instructions

  • Rinse and pat dry the shallots, and cut nto fine slices. Finely dice the herring fillets and pickles.
  • Peel, quarter, core and finely dice the apple. Add lemon juice, and mayonnaise.
  • Spice with salt and pepper, and stir thoroughly to combine all ingredients.
  • Keep refrigerated.If you intend to serve it immediately, leave it to refrigerate for 10 minutes.
  • Spread the tartare on the bread and serve the dish with fresh herbs.
