Ingredients
- Green Beans: 400g (14 oz) fresh green beans, trimmed and washed
- Onions: 2 medium yellow or red onions, thinly sliced into half-moons
- Butter: 2 tablespoons (or a mix of olive oil and butter for richness)
- Garlic: 2 cloves, finely minced
- Nutmeg: 1/4 teaspoon freshly grated nutmeg (adjust to taste)
- Lemon Juice: 1 teaspoon freshly squeezed (to brighten)
- Seasoning: Cornish sea salt and freshly cracked black pepper to taste
- Optional Garnish: Toasted sliced almonds or a pinch of red pepper flakes for heat
Instructions
1. Blanch the Green Beans
- Bring a medium pot of salted water to a boil.
- Add the trimmed green beans and cook for 3 to 4 minutes until they turn bright green and are just tender-crisp (al dente).
- Drain immediately and plunge them into a bowl of ice water to stop the cooking process and lock in the vibrant color. Drain well and set aside.
2. Caramelize the Onions
- In a large skillet or frying pan, melt 1 tablespoon of butter over medium-low heat.
- Add the sliced onions and a pinch of salt. Cook slowly, stirring occasionally, for 10 to 12 minutes until the onions are soft, golden brown, and beautifully caramelized.
- Stir in the minced garlic during the last 1 minute of cooking until fragrant.
3. Combine and Warm Through
- Turn the heat up to medium. Add the remaining tablespoon of butter and the drained green beans directly into the skillet with the onions.
- Toss everything together continuously for 2 to 3 minutes until the beans are heated through and coated in the onion mixture.
4. Finish with Nutmeg and Season
- Grate fresh nutmeg directly over the pan and toss well to evenly distribute the warm, earthy aroma.
- Remove the skillet from the heat. Stir in a splash of fresh lemon juice, then taste and adjust with salt and black pepper.
5. Serve
- Transfer to a warm serving dish and garnish with toasted almonds if you'd like a little extra crunch.
Chef’s Tip
If you want to serve this with a bit of a twist, you can toss in a handful of toasted pine nuts or finish with a light grating of Parmesan cheese just before serving.
