Ginger Soy Glazed Trout

Ingredients
- 2 trout fillets (skin-on)
- 3 tbsp soy sauce (or tamari)
- 1 tbsp grated fresh ginger
- 2 cloves garlic, minced
- 1 tbsp honey or maple syrup
- 1 tsp rice vinegar
- 1 tsp toasted sesame oil
- 1 tbsp vegetable oil (for searing)
- 1 green onion, thinly sliced
- 1 tsp sesame seeds
Instructions
- Whisk the glaze: In a small bowl, combine the soy sauce, grated ginger, minced garlic, honey, rice vinegar, and toasted sesame oil. Set aside.
- Sear the trout: Heat the vegetable oil in a skillet over medium-high heat. Place the trout fillets skin-side down and press gently for 10 seconds to prevent curling. Sear undisturbed for 4 to 5 minutes until the skin is crisp.
- Glaze the fish: Flip the fillets and cook for 1 minute. Reduce the heat to medium-low and pour the soy-ginger glaze directly into the pan around the fish.
- Baste: Spoon the bubbling glaze continuously over the top of the trout for 2 to 3 minutes until the sauce reduces to a glossy, thick syrup and the fish is cooked through.
- Garnish and serve: Transfer to plates, drizzle remaining pan juices over the top, and garnish with sliced green onions and toasted sesame seeds.
