
Boursin & Mustard Cauliflower Cheese

Ingredients
- 1 large cauliflower, cut into even-sized florets
- 100g Garlic & Herb Boursin
- 50ml whole milk
- 150g mature cheddar, grated (plus an extra 50g for the topping)
- 50g Red Leicester or Gruyère, grated (optional, for extra depth and color)
- 1 tsp Dijon or English mustard (or whole grain mustard for texture)
- A pinch of ground nutmeg
- Sea salt and freshly ground black pepper
Instructions
1. Cook the Cauliflower
- Preheat your oven to 200°C / 180°C fan (or gas mark 6).
- Bring a large pan of salted water to the boil. Add the cauliflower florets and boil for 4–5 minutes until just tender (pierces with a knife, but still holds its shape).
- Drain thoroughly in a colander and let any excess steam escape so the sauce doesn't become watery. Tip the florets into a shallow ovenproof baking dish.
2. Season and Cheese
- In the used pan, add a splash of milk, Boursin, Dijon or English mustard, ground nutmeg, and the main portion of the grated cheese (150g cheddar + optional Gruyère/Red Leicester) mix well.
- Taste the sauce and season with salt and freshly ground black pepper as needed.
5. Assemble and Bake
- Pour the rich garlic and mustard cheese sauce evenly over the cauliflower florets in the baking dish, making sure every piece is coated.
- Sprinkle the remaining 50g of grated cheese over the top.
- Bake in the oven for 20–25 minutes, or until the sauce is bubbling at the edges and the top is golden brown and bubbling.
