Cornish Sardine & Tomato Bruschetta

Experience the sun-drenched intensity of the Mediterranean on a single slice. Our bruschetta features silky fillets of sardines, soaked in olive oil until they achieve a magnificent, tender richness. Their bold, savoury umami is flawlessly paired with a vibrant heap of diced tomatoes, whose concentrated, candy-sweet tang bursts against the palate.

Ingredients (8 servings)

  • 2 cans of Sardines, (butterfly)
  • 8 slices of Ciabatta Bread
  • 2 garlic cloves, halved
  • 4 tbsp of olive oil
  • 2 Tomatoes, diced
  • sea salt and ground black pepper to taste
  • fresh Basil leaves for garnish

Instructions

  • Preheat oven to 375°F.Place the bread slices on a baking sheet and brush with olive oil.
  • Rub the garlic cloves onto the bread slices. 
  • Bake in the oven for 5-7 minutes or until crispy.In a mixing bowl, combine the mashed sardines and diced tomatoes.
  • Season with salt and pepper.Top the bread slices with the sardine and tomato mixture.
  • Garnish with fresh basil leaves
