The Full Veggie Breakfast

A full veggie breakfast is all about balancing those savoury, umami flavours with different textures. Here is a quick guide to pulling together a classic "Full English" style plate without the meat. One of the key components of a satisfying veggie breakfast is ensuring you include ample plant-based proteins. We also love a tiny flourish of parsley to add a fresh clean edge.

Ingredients

2 Eggs

50g Butter

5-6 Mushrooms

Whole fresh uncut loaf of bread

1 or 2 Meat Free Richmond sausages

1 vine ripened tomoto

Salt and pepper to season.

Finely chopped parsley (optional)

Optional: Beans. Fresh Orange Juice. Tea/coffee

Instructions

Grill or air fry one or two sausages for approx 10 mins 180 degrees

Melt some butter in pan and beat/scramble 2 eggs, add to butter and constantly stir fr 2 minutes with a wooden spoon until cooked.

Again, melt butter and slice and cook the mushroons until cooked.

Slice a tomato in half and grill until cooked through. Add a flourish of parsley.

Slice and toast some bread - butter, evenly.

Add some beans if required.

Season all ingrdients and serve.
